Meaning if Chateau Latour buys some vineyards way on the outskirts of Pauillac near the Haut Medoc, those vineyards are instantly First Growth vineyards. A little quixotic, right?\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eMost chateaux know that this situation really won’t stand for the fine connoissuer and his or her palate. To continue the example, if they are drinking Chateau Latour, or Font de Latour, or Pauillac de Latour, they want it to taste like Latour. So most Left Bank chateaux have gone on a program of buying, swapping, or otherwise exchanging vineyards with one another. So that all of Latour's vineyards, no matter which wine they are destined for, taste like Latour and are grown near the famous tower (Latour has no chateau anymore).\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eAnd so it is the case with Lynch Bages. Jean Marc Cazes, the owner of Lynch-Bages, is nothing short of a visionary. Not only has he undertaken the revitalization of the hamlet of Bages, as well as opening Bordeaux to wine tourisim and promoting gastronomy, he has completely refurbished Lynch-Bages and has spent the last 20 years on a program of purchasing, renovating, swapping and exchanging vineyards so that the estate's wines can all align. That brings us to this bargain of a beauty in Bordeaux – Lynch-Bages Pauillac.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e“Pauillac” used to be a third wine of Lynch-Bages – fruit from those far-flung areas in Pauillac away from the main chateau. But now, that is certainly not the case – it sits right alongside Echo de Lynch-Bages (the known second wine), if not actually displacing it. All of those far-flung parcels have now been swapped, and this is home-turf vineyards, the building blocks of Lynch-Bages.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eWhy not just make more Echo and discontinue this wine? Well, I have a sneaking suspicion it's because of the Bordeaux wine trade. The main wine and the second are sold through the merchant houses of Bordeaux. This wine is represented globally by the Cazes family – eliminating at least two middlemen in the process. For us, this means everything I mentioned before – one of the finest of Pauillac’s properties, in one of the best vintages, at an exceptional drink-now kinda price:\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eA pure burst of dark red and blue fruits emerges from the glass, immediately followed by graphite, leather, a touch of mint, mocha and very expressive floral notes. I’m tasting from a Zalto Bordeaux and nothing could be more profound: There is a seamless integration here that yields up exceptional drinking. It’s fresh, lively and open for business right now. I prefer it decanted. And ribs and this wine go amazingly together, especially if you give them a bit of  soy sauce flair. But better still, is in the grill, under the slow-roasting ribs, I put cut heads of radicchio with a “tray” of tin foil holding them away from the coals. The radicchio slowly caramelizes with the rib juices turning into something quite amazing, \u003c\/span\u003e\u003cspan\u003ewhich also is great with this wine\u003c\/span\u003e\u003cspan\u003e. Then, just to add complexity, I wrap red beets in foil, place on the grill, and roast them until tender. The sweet beets get chopped into the radicchio, the ribs make a sauce for the “salad,” and it all is so easy, it's a super-duper bonus to the meal (or free prep for tomorrow’s meal!).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003e\u003c\/span\u003e\u003cspan\u003e\"Winemaker Matt Dees is considered one of the best winemakers anywhere, and this blend [Todos] is ample reason to believe the hype. Intense, focused and dry but rich aromas of dark fruit, roasted wood, crushed rocks and wild herb enliven the nose, while the palate is weighty yet expertly tense. But it is the premier spot to grow Bordeaux varieties—particularly Cabernet—in Washington State. And that means some of the best Cabernet in the world.  \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eIt wasn’t always that way, and indeed, the story of Red Mountain and wine production is a twisty one. \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eOriginally, “Red Mountain” was slated to be a housing development for the nearby Tri-Cities. Three friends borrowed money from Dad to buy up the land and start construction. Unfortunately for them, they were about 20 years ahead of the curve and ended up with a whole lot of arid land and no customers. What to do?\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eHaving absolutely no experience with vineyards, or making wine, or anything else in the wine industry, they decided to plant a Cabernet vineyard. And once again, the friends were about 20 years ahead of the curve – Red Mountain has no water, and you need lots of water for vineyards.   \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eSpending the absolute last of their money (Dad refused to give anymore) our three heroes dug a well 500 feet deep. And they got nothing. Nearly giving up hope, they borrowed an extra twenty feet of pipe from a local apple farmer and tried one last time. At 516 feet, they struck water. \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eThat was 1971. Red Mountain’s vineyards were born, and Washington’s wine industry took a tremendous upturn in quality. \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eRed Mountain is one of those dynamic spots like Bordeaux, where certain grapes fit perfectly with the soil, climate, and aspect of the land. The soil is an iron-rich loess over large glacial sediments. The climate is continental, with a huge diurnal temperature change. And the aspect is a northwest diagonal ridge sloping down to the Yakima River. All of this combines to create amazingly inspired, Bordeaux-like red wines. Indeed, Red Mountain Cabernets have always reminded me of Margaux. Today’s example, CMS from the Hedges family, demonstrates that exquisitely:\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eDeep purple, pure and intense, with tremendous opulence and palate presence, the CMS Hedges is a wine of considerable nobility. It’s packed with loads of blueberry, black currant, pencil lead and sandalwood smoke-infused fruit. Its beautifully full-bodied texture gives way to ripe and powerful tannins, dark red cherry fruit, crème de cassis, graphite, touches of blackberry, and smoked sandalwood. \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eLike Bordeaux, it’s a blend of Cabernet with Merlot (and then, this being Washington, a splash of Syrah—hence CMS) that maximizes the qualities of each grape, resulting in a wine that’s greater than the sum of its parts. And like Bordeaux, this wine lasts – I had the privilege of sampling the ’89 vintage with Chris Hedges last summer, and it was simply ravishing. \u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eBut unlike Bordeaux is the price. I know there are some of you out there who think a wine at this price can’t be this good or last that long. You’ll be missing out. While the Hedges family were not our first pioneers of Red Mountain I earlier described, they were one of the first to buy and plant vineyards there.\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eHaving met the Hedges, I’ve found them to be one of those amazing wine families that refuses to add ego cost to the price of their wines. They never submit the wines to rating magazines, instead choosing to make a very high-quality product at an incredibly reasonable price and earning loyal followers along the way.
