But a short hop, skip and jump across France reveals just how tasty “other sparklers” can be. Allow me to introduce you to Kraemer Blanc de Blancs Brut Vin Mousseux. \u003cbr\u003e\u003cbr\u003eThat's a big name, so let me unpack it a little bit. This sparkling wine (vin mousseux) is made from Chardonnay grapes (blancs) in the driest style (brut). Kraemer pays homage to the German influence in Champagne (Krug, Moet, Mumm...), while also being an affectionate name for a shopkeeper. So this bubbly charmer from the Loire Valley should be on your short list for great summer drinking. Really, this mousseaux makes any occasion feel like a celebration:\u003cbr\u003e\u003cbr\u003eKraemer Blanc de Blancs Brut Vin Mousseux opens with notes of green apples and fresh-baked croissants. Champaignoise will claim that no “mere” sparkler can attain the toasty richness of Champagne, yet here it is! And when they choose dry, we’re in for one of the most delicious, exciting white wine rides of our lives:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eLe “G” de Chateau Guiraud is a wonderful example of the dizzying heights that white Bordeaux can reach.  Its complex aromas broadcast quince, yellow plum, grapefruit and lychee. This blend of 50% Sauvignon Blanc and 50% Semillon aged in one-year-old Sauternes barrels (the estate also makes a fantastic Sauternes—see below).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eOn the palate, you’re treated to a combination of bone-dry minerality, exotic, slightly Near East spices (think saffron, Aleppo pepper and cinnamon), and a gloriously rich fruit component. This is so delicious you’re not just going to drink a glass, you’re going to drink a bottle – and then come back for a case!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eIf you’re hip to Sauternes, you know of the incomparable, “above all others” per the 1855 classification, is Chateau is d’Yquem. And that is darn delicious stuff. Drink it as often as you can—especially if someone else is paying.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eOur little gem today, Guiraud, was founded in 1766 along a continuous border with Chateau d’Yquem on the same \u003cem data-mce-fragment=\"1\"\u003eterroir\u003c\/em\u003e and, along with d’Yquem, is the only Sauternes producer within the borders of Sauternes. The idea probably was to become rivals. But, the Guirauds were loud and proud Christians, putting a chapel on the property in order to worship. This did not pair well with revolutionary sentiment, and Guiraud entered a long period of decline.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eFinally in 2006, a partnership of three famous Bordelaise vintners bought the property with the grand and noble ambition to make it finally equal its neighborly rival. The vineyard was converted completely to biodynamics. A conservatory of grape varieties was developed containing all 135 original strains of Semillon and Sauvignon Blanc.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eAs Wine Master Jasper Morris puts it:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003e“Guiraud is a very ambitious property with aspirations to produce a wine that will one day rival d`Yquem. The wines are astonishingly rich, especially in light of the high proportion of Sauvignon Blanc in the blend, and are undoubtedly amongst the finest wines being produced in Sauternes passed my first level of the Master of Wine Exam (qualification never to be finished) and the occasion was dinner at Le Bec-Fin, once described as “America’s best French Restaurant” and winner of Conde Nast's 1994 poll in for “best restaurant in the country.”  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eBefore creating Waterford Wine, I had grown up in the “back of the house” – cooking – and Le Bec-Fin was considered Valhalla: the place of dreams, divine craftsmanship, and absolute adherence to French cooking tradition, all at once.  I had never been, and so once I got close (with a reason to celebrate), I had to go. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eI remember the dish:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eShaved, chilled sea scallop, shaved fennel, cubes of apple and cardamom gelee, set on a perforated bowl over another bowl of dry ice spiced with silver needle tea.  The server poured water onto the dry ice, resulting in a soft billowing cloud of white tea, cardamom, apples and fennel.  The aroma was extraordinary.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eNow the argument:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eJust before this amazing dish, the sommelier served us a Roussette du Bugey, explaining that it's Roussanne.  Two things: First, Pennsylvania wine law requires restaurants to buy from retailers, effectively adding a fourth tier.  That extra tier is the State of Pennsylvania, making a pretty penny.  This means restaurants have to search deep into the sea of wines, for those golden gems that taste not just twice, but four times above their price. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eSecond, Roussette is not Roussanne.  The sommelier misidentified it, and being fresh from an exam, I called her on it.  Roussette is Altesse, Savoie’s finest grape variety, and as the Oxford companion notes, “rich in mystery, exotically perfumed and well worth ageing.”  She, the sommelier, was wrong.  And totally unimpressed with my erudition.  I, on the other hand, fell in love. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eRoussette is beautiful.  In Franck Peillot's version, it’s oh-so-very-pretty, but not affected at all.  It’s just a bit like white Burgundy, having structure and density on the palate, yet also a bit exotic, tasting of red apples, baking spice, herbs, and honeysuckle. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eThe pairing was extraordinary.  It was the wine of the night.  And when you consider its price tag (and all the other circumstances), that is saying something rather great.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eI could go on with a fruit salad description but for those of you receiving this email I think I can do something better.  I can give a recommendation.  Every one of you whom I have poured this wine for, has bought some.  And not just the courtesy “thanks for the glass” one-bottle purchase.  But a purchase well imbued with desire to have the wine again. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eI learned of the Savoie and Roussette via a touch of snobbery and enthusiasm mixed up together.  But you don’t have to take the convoluted route.  Purchase just a bottle, that is fine, but I guarantee you’ll come the one and only area in the world where you’ll get French food, but in German sized proportions. \u003c\/p\u003e\n\u003cp\u003eAnd oh, what food it is - let’s just start with some low-hanging fruit - tart flambee, the tart that’s bacon, onion and cream sauce. Follow that with a plate of Choucroute Garnie, which is basically four or five sausages (and bacon), boiled potatoes and smothered in onions. Maybe a little bit of a crayfish soup interlude? And then how about some Munster cheese to finish off the meal? Doesn’t this all just sound wonderfully hedonistic? The only thing that is missing is the wine!\u003c\/p\u003e\n\u003cp\u003eBut the wine isn’t missing at all, it’s right here in the glass! Bold and pleasing aromas of yellow pear shine, reminiscent of a Poire Williams distilled in the Voges Mountains just behind Alsace. The character is supple and golden, smooth as freshly cut overripe Bosc pear, with just the loveliest of subtleties of texture and depth. There is a long tradition of blending grape varieties in Alsace, and Maurice Shceoch Cotes d’Ammerschwir follows suit. The wine is a blend of several different Alsatian varieties, with each individual part—Pinot Blanc, Gris, Muscat and Sylvaner—contributing to its complexity. This wine is perfect as a cocktail, sittitng out in the sun watching the clouds hanging on the top peaks of Vogues, but it is also perfect on a hike up into those very same mountains, served at a picnic underneath the pines. \u003c\/p\u003e\n\u003cp\u003eAhh, if you can’t tell, I truly love Alsatian wines and their spirited, invigorating manner. But, as the years have gone by, I can say that most of the blends of the region - call them Gentils or Edelswickers or what you will - have gone up in price and down in quality. \u003c\/p\u003e\n\u003cp\u003eThat was why, when Itasted Maurice Schoech’s blend, I fell in love all over again—the quality is beyond compare, and the price is more than reasonable for what is in the bottle. I say Maurice Scheoch, but the winery is now in the hands of his two sons. And while I couldn’t find out exact specifics about this wine, the name and the size of its vineyard holdings leads me to believe that it is a blend from their single vineyard (and mostly Grand Cru) vineyard sites from the hill side of Ammerschwir. It is also my understanding that it’s almost entirely Pinot Blanc, with little touches of the other grapes. \u003c\/p\u003e\n\u003cp\u003eOne sip, and I believe your love affair with Alsace’s great white wines will be rekindled as well. We’re talking about really darn good Sauvignon Blanc – Gerard Boulay’s Sancerre.\u003c\/p\u003e\n\u003cp\u003eEven though Sancerre has been made since the 1400s, unlike Chablis and Burgundy, it doesn’t have the complexity of laws governing its vineyards. In some ways this is good – I believe the wines remain dramatically underpriced, simply because they lack the tag “Grand Cru.” In other ways, this is bad – about 75% of wine under the appellation isn’t grown on Kimmeridgian soils, the same soil type that—in both Sancerre and Chablis—gives the wine minerality, drive and energy. Instead, many are grown on clay or sandy soils. Not all Sancerres are created the same, and it can be a bit of a minefield.\u003c\/p\u003e\n\u003cp\u003eGerard Boulay’s Sancerre is an example of Grand Cru. Gerard traces his history in Sancerre at the small village of Chavignol back to 1380. At the town square, the records division mentions Jean Boulay as an owner of vineyards. The wines of Chavignol Sancerre are produced on “terre blanche” soils, making them some of the most distinctive and soil-inflected Sauvignon Blancs produced in the Loire, with a delineation and minerality often reminiscent of a top Chablis (or white Burgundy). And here, with the 2021 vintage, we are getting one of Boulay’s best.\u003c\/p\u003e\n\u003cp\u003eThe wine opens with a stellar bouquet of gooseberry, tangerine, lime peel, great minerality, white flowers and a touch of fresh tarragon in the upper register. On the palate the wine is pure, full-bodied and rock-solid at the core, with outstanding focus and grip, snappy acids and great soil signature on the long, complex and very classy finish. Of course I will be drinking this immediately, but for those of you who stash a few bottles away, you are in for a divine treat – this will age exceptionally well, for more than a decade.\u003c\/p\u003e\n\u003cp\u003eWines like this come at a price, and Boulay is never cheap. But luckily enough, we were still able secure a small allocation at a great price. You eagerly begin to imagine the summer bounty you hope Mother Nature provides for you. This feeling of anticipating summer ― of cherishing and cultivating nature, of daydreaming of warmer weather, of whiling away a vernal weekend afternoon with fresh food, good wine and great friends ― that feeling of the good, green earth is what these wines are. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eI allocated myself just one bottle each of Janvier’s Jasnières and Cuvée Silex this season, and I made the most of both of them. And finally, squash blossoms stuffed with more chèvre, fried and served with slivered garlic scapes. But because I only got one bottle of these wines, I didn’t share either of them or any of this. The Jasnières is planted on clay and limestone soils and has stronger fruit notes.
