Let me introduce you to Georgia with a few fun (mostly wine) facts:\u003c\/p\u003e\n\u003cp\u003eFirst, Georgia is the place where humans started to make wine. And this isn’t just a hoax or silly story, its actually documented by archeologists. Humans some 8,000 years ago grew grapes and fermented them in clay pots, or Qvevri, in order to produce wine.\u003c\/p\u003e\n\u003cp\u003eThis makes Georgia not only the birthplace of wine, but also the longest-running producer of wine in the world. So while we may think of Georgian wine as unique or unusual, it’s actually the rest of the wine world that new on the scene!\u003c\/p\u003e\n\u003cp\u003eAnd Georgians actually think of themselves as Europeans. That fact kinda blew my mind but it’s true – they think of themselves as the farthest eastern country in Europe. They aren’t Russians, nor Persians, nor Chinese nor Mongols; they are Europeans. Can’t fathom that given their geographic location? Then consider this: Georgia is currently the largest per capita non-member contributor to NATO.\u003c\/p\u003e\n\u003cp\u003eThe label, and the name (and the wine) are indeed meant to intrigue, invite and interest Americans in Georgian wine. The “Guardians” brand refers to the fact that Georgia has been invaded by all those nationalities mentioned before (and more) and have always fought them off. So they’ve been guarding wine for nearly 8,000 years. The label honors Lela, one of Georgia’s legendary woman warriors.\u003c\/p\u003e\n\u003cp\u003eWhile all this is intellectually titillating, it really wouldn’t matter to Waterford if the wine sucked. And this wine certainly does not suck. Once the salt was burning hot, he seared a tuna loin on it. Next came a splash of ultra-fresh olive oil, a squeeze of blood orange and Meyer lemon, and a dusting of shaved scallion. Voila! Straight onto the table for a family-style meal. the family); fresh, crystal clear and seamless in its flavors (Swiss); yet all at the same time textured and rich – fully an Italian white. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe vineyards themselves (see above) are magnificent – they run up 1200 meters straight into the glaciers on vines that are trellised on the extremely old “tree” high tier system. This allows cool air to sweep down the granite mountain \u003c\/span\u003e\u003cu\u003eunder\u003c\/u\u003e\u003cspan\u003e the grapes and vines. Each vine gets its own tier and each tier is hand made to that vine. This is truly hand crafted wine, and as such there isn’t much to go around – 4 acres of vineyards produce 1,000 bottles for
