The idea of terroir achieves its crowning glory with Chardonnay wines from the Kimmeridgian soils of Chablis. These wines are at their best when they’re grown and vinified plainly and simply, with nature taking its course in the vineyard as well as the cellar. And these are the kind of wines crafted perfectly by Domaine Vocoret.

Vocoret is one of Chablis oldest producing family domaines, tracing its roots back to 1870. While the Vocoret family embraces new vineyard and cellar technologies, they primarily devote their energy to heightening the longevity, the drinkability, and the identity of terroir in their wines. Simply put, the family harmoniously hews the characteristics the Chardonnay grape to the qualities of their Kimmeridgian soils. We’ve have two of their gorgeous Chablis on special today, both aged four years, both poised for supreme refreshment.

The 2014 Chablis is two-thirds from the famous Pargues vineyard and one-third from the edge of Montee de Tonnerre. In other words, it’s punching way above its weight.  The wine opens with aromas of Meyer lemon rind, flint, limestone, beeswax and pink grapefruit, and its acidity sings through a f refined and seductive mineral palate. Which is to say, the wine comes slammin’ out of the gates, ready to  crank any party up a notch. Serve as a cocktail while your waiting for your big Bordeaux to open up, or make it the main course with some grilled scallops and leeks in tarragon and lemon butter.

But don’t stop the party there! The 2014 Chablis Montee de Tonnerre raises the roof even higher. Wild aromas of lemon and grapefruit pith are backed up with ginger, jasmine, mineral salts and limestone. The palate is dry and pure, with an attack that is long and intense. This is a powerful white wine that commands attention from kitchen to table. Serve with chicken breast poached in watercress cream sauce and garnished with fried oysters. For vegetarians, serve with roasted cauliflower and garlic soup garnished with black truffles
