Rush Creek Reserve – arguably Wisconsin’s most famous cheese, winner of tasting competitions worldwide, and made and released just once a year. Produced only in the fall, as the diet of our cows begins to change from summer pasture to the winter’s dry hay.  This rich milk is perfect for a cheese like Rush Creek, so soft and decadent that it’s often referred to as savory custard.  Each cheese is wrapped in spruce bark, which gives shape to the cheese while it imparts a subtle woodsy flavor.

Want to know what pairs amazingly well with this cheese? Champagne! And we have two of our favorites – Charles Heidsieck Brut Reserve and Gustave Lorentz Cremant Brut. It is “simply a life enhancing experience to have a glass of the fruity, Charles Heidsieck Brut Reserve,” Champagne critic Richard Juhlin notes. Its beautiful, crisply dry fruitiness is an amazing partner with Upland’s Rush Creek Reserve. The Gustave Lorentz Cremant Brutis a scintillating counterpoint – a pure and refined expression of toasty crispness, joined with layers of cacao on the palate. Two amazing partners for this sensational cheese.
