Working at Waterford has many perks, but one of the best is when friends share aged and rare bottles from their private collections. This has been a long and storied tradition with wine at our Milwaukee locations, but, lately, friends of our Madison Orchard Pointe location have been sharing some exceptional whiskey.
It was on one such day recently, while sampling an assortment of rare and allocated bottles, that today's featured bourbon arrived.
This was one we had been waiting for. This private barrel of Backbone Uncut is just shy of 10 years old. When we tasted the barrel sample in September, we knew it could hold its own against the heaviest hitters in the bourbon world, and we suddenly had the opportunity to prove that we were right.
We tore into a case and poured a sample for this collection of bourbon connoisseurs (some even embrace the "snob" label), and to a person, they all agreed that this bottle belonged on the table with its esteemed and allocated brethren.
Backbone has been sourcing barrels of whiskey since before bourbon (and bourbon prices) exploded. Leaving them with stores of exceptionally aged whiskey that they can offer at fair prices. It's long been one of our favorite bang-for-your-buck producers.
When you commit to any private barrel, you want it to be a showstopper, and this one absolutely blew us away. The age statement (116 months) alone makes you take notice, the high rye blend (75% corn, 21% rye, 4% malted barley) is perfectly in balance, and at cask strength (117.1 proof) it shows remarkable subtlety and finesse.
Despite being high rye, the palate here is dominated more by sugar than spice. Sweet Caramel, brown sugar, and french toast are the primary layers here, with an undertone of cinnamon and baking spice. Gentle, coating, and warming, it's a perfect bourbon for your winter sipping, or gift for the whiskey love who has everything. We promise they don't have this.
