Barrell Craft Spirits, founded by Joe Beatrice in 2013, is an independent bottler and blender based in Louisville, Kentucky. The company focuses on creating unique, high-quality spirits through a meticulous process of sourcing, blending, and finishing. Unlike many traditional distilleries, Barrell Craft Spirits does not distill its own whiskey. Instead, they source premium barrels from various, carefully selected producers across the United States and beyond, allowing them to experiment with different mash bills, aging processes, and finishing techniques. This innovative approach has garnered them numerous awards and a dedicated following among whiskey lovers.
'Dovetail Whiskey' Finished in Rum, Port & Cabernet Barrels is one of Barrell Craft Spirits' signature whiskeys, showcasing their expertise in both finishing and blending. This whiskey is a blend of Tennessee bourbon and Indiana whiskey, finished in a combination of Dunn Vineyards Cabernet Sauvignon barrels, Black Strap Rum casks, and late-bottled vintage Port pipes. The result is a complex and layered spirit that has received widespread acclaim.
Dovetail Whiskey offers a rich and inviting nose, with an initial wave of dark fruits like blackberry and plum, complemented by hints of caramel, vanilla, and toasted oak. Subtle notes of molasses and brown sugar from the rum casks add depth and complexity. On the palate, Dovetail is full-bodied and luscious, featuring prominent flavors of ripe berries, dark chocolate, and toffee, interwoven with spicy undertones of cinnamon and clove. The port influence enhances the velvety texture and a touch of sweetness, while the cabernet barrels contribute a light tannic structure and layers of dark fruit. The finish is long and satisfying, with lingering notes of dried fruit, sweet oak, and gentle spice, showcasing the interplay of the different barrel finishes and leaving a lasting impression of complexity and balance.
