Our latest drop from Dancing Goat has arrived.  It's a private release of their 7 Year Limousin Rye, finished in a toasted oak barrel. This was our hands-down favorite barrel we tasted on our last trip the distillery.  Rich and balanced, even at cask strength with just a hint of classic rye spice. 

Limousin oak is used in some of the most prized and expensive barrels in the world.  Sourced from small parcels in central France, its large grain and tannic wood make it an ideal aging vessel for spirits. Dancing Goat has an entire solera system of limousin oak barrels that it uses to get the precise style of rye they are seeking. 

The character of this batch comes from the toasted oak it's finished in. Most whiskey spends its time in charred barrels, which are exposed to short bursts of intense flame. Toasting, in contrast, is a more prolonged exposure to a less intense flame, resulting in a surface that lets the natural character of the whiskey shine through, rather than drastically altering the character of the liquid. Because the toasted oak is an accent to the charred barrel, the resulting whiskey is exceptionally complex and smooth.
