The 2021 Nostre Païs Blanc opens with a distinctly southern warmth, but carried on a breeze rather than weighed down by it. Roussanne and Grenache Blanc lead with ripe pear skin, yellow apple, and a soft wash of stone fruit, edged by fennel frond, chamomile, and a faint almondy bitterness that keeps things honest. There’s a savory undercurrent—warm herbs, crushed stone, a hint of beeswax—that speaks clearly of Costières-de-Nîmes’ sun and wind. On the palate it’s textured but not heavy, gently phenolic, with saline lift and a clean, tapering finish that leans more Mediterranean table than cellar trophy.
