Pale salmon in the glass, lightly pétillant, and unmistakably coastal, Rubentis opens with wild strawberry, tart cherry skin, pink grapefruit pith, and a whiff of salty air and crushed seashell. There’s a faint herbal edge—something between fennel frond and seaside grass—that keeps the fruit brisk rather than pretty.

The palate is feather-light and electric, driven by racy acidity and that signature Txakoli spritz. Red berry fruit stays taut and crunchy, framed by lime zest, wet stone, and a saline snap that feels more Atlantic than Mediterranean. Dry, refreshing, and quietly complex, it finishes clean and thirst-inducing, built less for contemplation than for oysters, anchovies, and another pour.
