This tasting is essentially a two-fold challenge: First, can we drink white wine in the winter?
Which begs the second question: Can white wine be as robust, powerful, and richly experienced as red wine?
Our answer for both? Of course! Welcome to the world of heavily textured white wines.
Heavy texture - it’s a metaphor, and like all wine metaphors can mean lots of different things to every single person. But metaphors can be explained, experienced, and shared in a common understanding. We all know the difference between skim milk and creamy and would never confuse the two even if they have a similar flavor profile. Here, in the case of this alcoholic liquid that we love, we share the common metaphors of smooth, silky, oily, creamy, rich.
And these metaphors can be expressed in scientific terms - polyphenols and phenolic character; flavanols and their qualities; fermentation processes, malolactic conversion or lack thereof; fining and filtering, and pretty much every other tool at a winemaker’s hands.
