Mexico’s hottest winemaker!—Bet you haven’t read that before. 

As the winery says, “ Casa Jipi (pronounced Hippie) is a pochismo that shows how diversity and mixticity enrichens our countries. We all have un poquito de Jipi in ourselves, both sides of the border.”

Now we at Waterford have to admit - while we love all things Mexico, we are just at the nascent dawn of our understanding of ascending Mexican wine culture. But it is apparently ascending, and our Mexican friends tell us that this is not only one of the hottest properties in Mexico, but it’s also made by Mexico’s reigning hotshot winemaker (Lulu Martinez Ojeda). Terroir Club is about exploring new wines and wine regions, and when you can get the best of the best, we want to take that shot! 

One of the reasons I enjoy Sauvignon Blanc is because where you plant it changes its flavor (a true terroir grape). So it is fascinating to think of the nearest U.S. region for high quality SB, Happy Canyon in Santa Barbara, and compare this wine's flavor profile.

The initial taste is of wet stone and sea brine and—being from Baja—that makes sense. Wafting along with that are hints of citrus notes, lime and grapefruit zest, layered in with guava and passion fruit. There are very subtle undertones of Mexican herbs - epazote, hoja santa, thyme and papalo. There is seamless intrigue felt throughout this wine. And what to pair with it? Mexican food, of course!
