Founded in 1818 with the marriage of Nicolas François Billecart and Elisabeth Salmon, the house remains family owned more than two centuries later. From its historic home in Mareuil-sur-Aÿ, Billecart-Salmon has become one of Champagne's great reference points through an unwavering commitment to freshness, purity, texture and balance.
That elegance is no accident. Billecart-Salmon was an early champion of cold settling and low-temperature fermentation, techniques designed to preserve aromatic clarity while allowing the wines to develop slowly and precisely. Chardonnay brings lift, chalk and linearity; Pinot Noir provides structure and vinosity; Meunier contributes fruit and suppleness. Add reserve wines, extended lees aging and meticulous blending, and the result is the unmistakable Billecart style: Champagnes of considerable depth that rarely rely on sheer weight to make their point.
